Regarding 3, the demo site used to demo every component possible. It also used to contain a lot more example things like example images. But I eventually went away from that. People who just want to get a site up and running, and don't care about using the components in a custom way, would have to dig through and delete too much. Also when updating your version of the template, if you have to manually merge, it's a lot more to go through. Instead, I deleted everything except the bare minimum, and on each page I put what I thought most people would use (a few features on the home page, a gallery for funders on the team page, etc).
I agree it'd be great to see a screenshot of each component though. What I may do is make a demo page with all the components, but keep it to myself, and have it automatically take and export screenshots of each component that I can put in the docs.
Regarding 5, I agree that'd be nice but it's probably too much to maintain right now, especially since the template is still changing a lot. Also some of those things in the config appear in many places. For now I'm just gonna keep it as a text description of where it shows up
from lab-website-template.
