Upgrade to Modern JDKs

As a follow on from case #1, we might as well squash the problems that customers have been having with modern JDKs.

This should be a simple case of upgrading the Spring Boot version.

WARNING: the course references a Dockerfile from a forked version of this repo (from Richard Knowles), the reasons why are lost in history, but it means that if we're going to preserve that video, we are going to have to overwrite the image tags. Urgh. Take care!

The idiot trainer of the course is using the :latest tag, which is extremely dim of him BUT it could be a saviour here!

MapBox deprecation warnings

I've been receiving a lot of warnings from MapBox that their API is being deprecated on June 1. I'm not at all clear if this affects us, or what projects are affected, but I believe this is the only project I did which used a MapBox API key.

The K8S course switched across to leaflet and openstreetview, so I think that course is safe.

Anyway, we need to get the images replaced by June 1.
