Update course files @ Udemy and VPP about fleetman-webapp

The chapter 7 folder is the one affected.

There's also a folder "Microservice Projects" which is going to be heavily affected.

I've made a first attempt at building a new Chapter 7, but we'll need to replay the videos to check all this out.

Later in the course he switches to fleetman-production, I guess this is a version which uses the database.

That's going to need replacing as well.

Need to find where that image is first used. It's definitely in use by docker-compose - I guess it will be the volumes chapter.
