It might be useful to differentiate between CouchDB 1.6, 2.0 and Cloudant, since CouchDB 2.0 is much closer to Cloudant but 1.6.x is probably what's used by the majority of CouchDB users today.

https://issues.apache.org/jira/browse/COUCHDB-3120 documents some of the endpoints no longer supported.

I think this list could be extended to :

(pretty sure there is a new _config API syntax in 2.0)
