Wish I could handle this better but there is no "uninstall" hook I can tie into to revert global config changes.

You can open up your config.yaml (typically in your .octoprint folder) and you'll find this:

appearance:
  color: black
  components:
    disabled:
      tab:
      - temperature
      - control
      - gcodeviewer
    order:
      tab:
      - plugin_bettergrblsupport
      - temperature
      - control
      - gcodeviewer
      - terminal
      - timelapse

If you nuke the following you'll get back the control, temperature, and gcode tags:

    disabled:
      tab:
      - temperature
      - control
      - gcodeviewer

another option you have is to ensure the highlighted options are NOT enabled prior to uninstalling the plugin:
