add ability to replicate Sentry report generation for testing

Useful for testing what gets reported to Sentry at the end of the day, based on a log.Field, such as the use case in sourcegraph/sourcegraph#61895. Ideally we can expose a simpler struct that represents how a report shows up in Sentry.

Add options to `log.Init` to change format and possible other options

There is a need to provide a options to the logger through something else besides environment variables.

@eseliger For instance wants to be able to change the format depending on whether the tool is executing with a TTY available.

Should this be “development mode” or could we expose that as an option in log.Init to say humanInterface or something like that? Feels a bit more generic than SRC_DEVELOPMENT and I could make it dependent on IS_TTY for my use-case
