Publishing to RubyGems

Related to #5.
The ruby-tree-sitter gem isn't published to rubygems and shipit isn't able to build it.
It is possible to do, we need to use a dependencies.pre step to install the tree-sitter library & headers so that the gem can be compiled.

- ./deploy/install-treesitterHowever, there seems to be a bug with the gem. I receive this error message and even when the bundle config variables are set they are not respected. We need to update the gem to read these values if they are set before we're able to build it and release this gem to rubygems.

I think we can copy the setup from the ruby-lsp repo to publish the gem documentation to Shopify's GitHub pages.
