I'm able to reproduce by not passing in VIRTUAL_HOST variable. I'll get this fixed, thanks for the report!
For now you can pass in -e VIRTUAL_HOST='pihole.hostname.local' into docker similar to how ServerIP is passed in as a work around.

#21 should have fixed this for tag debian_pi-2.8.1_admin-dev, give it a try please.
