I've seen issues like this before, but they're quite hard to track down.

Can I suggest you try the Pi-hole V6 beta container (development-v6 branch/tag), which is more or less stable now - and is a complete redesign of the container from the ground up. It no longer contains s6 overlay, so you shouldn't see this issue!

Make sure you take a look over the Readme file on that branch first, as the environment variables have changed somewhat

Do you know when this will get pushed to latest as the issue is fixed when I went to check it again a few days later

no ETA on a release for v6 currently, but are you saying that the latest image is now working for you?

Yes latest is working and tbh I forgot about this issue.
