There are 4 rivers that join Peel River and the Peel River Watershed. It's possible to take any of those 4 then join Peel River and go either up to Fort McPherson to exit, or resupply and continue on to Inuvik or even Tuktoyaktuk and the Arctic Ocean.

Snake River Class 1-2, occasional 3 (300km to Taco Bar)
Bonnet Plume Class 2-3, occasional 4-5 (probably around 350-400km to Taco Bar)
Wind River Class 1-2 no whitewater (200km to Taco Bar)
Hart River Class 1-2, occasional 3 (probably around 350km to Taco Bar, a lot on Peel River)

Peel River from Taco Bar (common exit point so easier to calculate distance) to Fort McPherson: 320km

Seems Peel River is mostly muddy and considering Wind River is probably boring for you, that means the best options are Snake River or Bonnet Plume. To me class 2-3 with occasional 4-5 sounds scary as shit. Read a trip report where someone flipped their canoe on day 2, meaning there's no easing in to it either. Snake River sounds pleasant hehe.
