Do you think it might be worth starting the structure from scratch since we're removing so much anyway?

It looks like everyone is working in MS Word format-- I hate it (as a linux user). However, I can deal. Not a problem.
Let the writers work in whatever format you dictate (or they choose). I have been messing with docbook for a few weeks on and off now. I am almost a docbook noob! If you get me the content, I will create a docbook 5 document from it.
I am currently using the 2.1 content and making pull requests on this project for a new 2.1.1 version in the docbook format if you want to see what it is shaping up to look like.
Oh, and I am adding git to the version control section(s). You can't stop me.

Actually, I don't mind if you build a modern buildable DocBook XML version for 2.1.1, but please consider contributing to the "2014" trunk release. I was planning on doing this in markdown format so we can edit it directly in GitHub, and I can convert that to a format suitable for mass editing in Scrivener here.
On the topic of structure, I think the best bet is to use the road map of four major sections as the starting point. I have been writing the new authentication chapter, Kevin Wall has contributed a new crypto chapter. Then we can refactor more content as the time comes.
