As you pointed out there is no direct way of watching for change events with the current implementation, but maybe the polling setup we have is enough?

This config checks the GPIO port in the configured interval and then sends an MQTT message if the state changed.

If this doesn't fit your use case could you help me understand why?

This is supported in the GPIO component of release 1.0.0, it now listens for changes by default instead of polling.
