Autolyse the flour and water before adding salt and yeast (except for poolish/biga). Where can I get cheap bannetons? Use warm water: dough should be 95º (should I buy an instant read probe thermometer?). Ken uses a 12-quart round cambro tub for mixing the dough, 6-qt for poolish/biga/levain.

Pincer method: throw in yeast and salt after the autolyse. Fold over the dough a few times then pinch it with a lobster claw a bunch of times.

He does the same thing Char Robertson does to shape a loaf and tension the exterior: let it stick a bit to the counter and pull it toward, rotate and repeat.

Envisioning Information, Edward Tufte.

I got an MCAD library card through work. The plan is to walk over when I need a break from the screen to leaf through interesting books. I started with Tufte.

I read through his books 5 or so years ago. I'm no data visualizer, but both times I've hoped for the revelation of a beautiful and efficient graphic sense. Not yet. Maybe next time, or else I need to re-learn how to read critically and absorb information.

I feel like reading Tufte makes me a snob more than anything. I know what I don't like, but can't muster the why. It'd be nice to be able to give a fair critique instead of (1) being an asshole or (2) holding by tongue because I'm without anything nice to say.
