Simplify Tap Dance actions

The functionality added in tapdance.h was made primarily with Clip Studio Paint in mind, back when I used a pen display without its own shortcut keys.

Since then, I've upgraded to a model that has all the keys I need on its bezel, so the complicated tap dances (and the issues they bring with them) aren't really needed anymore.

I would like to keep the dual functionality tap/hold keys (quick Control+Z/X/C/V), but since the tap dance itself isn't needed anymore, see if it can't be simplified so that double or triple tapping one of those keys doesn't have to be a special case in the handling function.

Update documentation for Planck keymap

The README was outdated even before copying over the files from the old repo.
Rewrite the document and make new images for the keymap, and maintain these images as part of the repo too.

Add build instructions to overall README

Compared to having the keymap in a fork, the build process is a bit more complicated and will require cloning another repo and symlinking files into it.
This should be described in the README of this repo.
