du solltest jameica/hibiscus nicht mit dem Argument p und dem Passwort starten, dann kann "jeder" das Passwort in der Prozess-Liste lesen. Es gibt auch die Möglichkeit, das Passwort in einer Datei an jameica zu übergeben, dazu ist das Argument -w zu verwenden:
Z. B. /opt/hibiscus-server/jameicaserver.sh -w /var/lib/hibiscus/pwd.txt

I did reply to the post on the hibiscus forums but wanted to track the "issue" here.

Can you add a sample docker-compose.yml?

I did not have the time for any testing, yet. But I do not see how to give my settings to the container.
Where can I map anything that makes sense?

I am going to use an existing mariadb container so at least I need to set the connection string, right?
The dockerfile does not contain any ENVs that I could use.
