It's not possible to make a non-system camera the default on Android 11 and later.

The double click on power button is a different thing. It's not implemented yet.

Thanks @thestinger, on my Pixel running GrapheneOS, when I double-click the lock button, I'm presented with the option to choose what camera app will start, right now I just see the original Camera app and OpenCamera (which I installed using F-Droid). But this new Camera app doesn't appear in the list (even though I installed the APK and I'm able to run it from the home screen).

Maybe you're saying OpenCamera is a "system" camera but this new camera app ain't? How can we get this new camera app blessed?

Double clicking the lock button doesn't have to do with that. That's just because this doesn't implement the intents, etc. for that yet. Open Camera cannot be used as the default on GrapheneOS or AOSP. Only system camera apps can be used for the media intents used by other apps.
