Document/Change end date for data extraction

I read your article on https://developers.redhat.com/blog/2020/06/15/tracking-covid-19-using-quarkus-amq-streams-and-camel-k-on-openshift - nice. So I had a look at the source code.
Nicely written. ;-)

In the JhuCsseExtractor you extract all data from 02-01-2020 to 05-21-2020 (the time of writing this).
Maybe you could place a comment in JhuCsseExtractor#dateInValidRange why you stop on 05-21-2020 (now a few months more are gone ...).
Maybe the current date should be used.
