You are missing ffnvcodec which is part of ffmpeg

I just looked into the issue.
It's dumb, but just install ffnvcodec-headers to meet the dependency.

As I have no control over mpv dependencies or that package in the AUR.

You're good mate. What's dumb is mpv suddenly having a hard dependency for a NVIDIA codec.
But that's an upstream package maintainer issue now.

Next time when you have an error you don't understand, don't be afraid to just look it up.
