Can't override emoe_guzzle.monolog.format about guzzle6-bundle

FYI, the parameter I'm trying to override is:

emoe_guzzle.monolog.format

Configuration in config.yml:

emoe_guzzle:
    log:
        enabled: true # Logging requests to Monolog
