How to: Indoor pot plant without drainage?

We are finalising work on an indoor planter box that will fit a cubic metre of organic matter: dwyl/home#219
It has been thoroughly insulated with (4 layers of) roof (waterproof) paint to ensure it's water retention.
Now I need to understand what needs to be done to ensure that:

a. What organic matter is appropriate for something this big!
b. The layers of matter to ensure internal drainage without an escape for the water.
c. Moisture levels are controlled so the plants don't drown/rot in "too much water"

Lawn Grass

Context:

While we don't want to have a "lawn" because it's water-wasteful,
we have a couple of areas of the garden that will benefit from decorative grass.
The "rolled" grass we had installed last year was very thin and not hard-waring.
So I'm considering planting far more sturdy grass from seed.

However the counterargument is: if it reliably preserves thousands of €'s of food, it's a no-brainer investment.

Ground Cover Crops

In permaculture systems we try to keep the ground permanently covered with mulch, green crops (green manure) or perennial ground cover plants. This mimics nature, which rarely leaves any bare soil. Bare soil invites weeds and causes erosion from wind and rain.

The crops are all productive (edible), low-maintenance - especially in winter - and will improve soil quality!

How to grow grape vines from seed? 🌱 πŸ‡

My favourite grapes are an Heirloom variety that are increasingly difficult to find/buy because they have seeds.
I have picked and eaten them several times and they immensely flavourful!

In Portugal these grapes are colloquially referred to as Uva Americana because they are thought to have originated from the east coast of the USA.

According to wine historian Edward Hyams and wine expert Jancis Robinson,
"There is ample evidence that the labrusca was growing wild in North America before Europeans arrived."

The scientific name for these grapes is "Vitis labrusca", "Vitis" meaning grapevine and "labrusca" meaning "wild". Apparently these grapes are the closest thing to "wild" that we get in Europe now ...

Vitis labrusca are high in potassium, magnesium, folic acid e vitamin B6, flavonoids e resveratrol.

Most city-folk - that have never picked a grape off a vine - have grown accustomed to seedless grapes so producers focus on them.
I get it. Seeds are annoying. But genetically modified (or selectively bred) monoculture is worse.
This last time we found the grapes for sale at the local market, I saved as many seeds as I could; 56:

If even 10% of these seeds takes and we're able to plant out 5 vines it would be more than "enough".
But however many sprout & survive is great.

I don't drink wine so while I have superficial knowledge of varieties I don't deep dive into any I don't like.
