Update Version

Update docker image, it's been a long time though, might have to deal with some breaking changes

Fix issues, redo configuration and redeploy

I think I broke my step-ca instance after moving a lot of services around and updating some IaC which required moving files and directories around on my hosts.

I've been putting off updating this service since I started my homelab, but this one needs a complete overhaul. I didn't "keep" the persistent data, when I refreshed some VMs/services and now I'm getting errors when Traefik tries to get some certs using ACME.

Let's take the time to configure and deploy this service the right way and making sure to keep the configuration and data separated.
