GDPR Example?

Hi, thanks for the library, looks cool!

Would you be open to including an example for GDPR-compliant tracking (tracking after consent given by clicking "Accept Cookies")?

There is also the option of tracking without any personally-identifiable information, but this is less interesting.

I saw that there was an example in the analytics demos, but it doesn't look like this is with hooks.

Hope this is the right repo to submit this in!
