EM is pretty tough to test. In lita-slack, I did it by having the method that calls EM.run accept an optional Queue as an argument. In normal operation this argument is not used, but in the test, a queue is passed in, and the method sends the newly connected WebSocket into the queue. After invoking this method, the test calls Queue#pop, which will block the thread until an item is received on the queue. When it wakes up, you can be sure that the asynchronous code has executed.

See Lita::Adapters::Slack::RTMConnection#run and the #with_socket helper method used in the corresponding spec.

In your case you'd be using a EventSource instead of a WebSocket, but I think the same pattern will work.
