Demo set up failed on EC2

Issue Description

The demo doesn't work by following the instruction of EC2 Demo.

Services that connected to hsqldb failed to start with the following error messages:

Error starting ApplicationContext. To display the conditions report re-run your application with 'debug' enabled.

Description:

Failed to configure a DataSource: 'url' attribute is not specified and no embedded datasource could be configured.

Reason: Failed to determine a suitable driver class


Action:

Consider the following:
        If you want an embedded database (H2, HSQL or Derby), please put it on the classpath.
        If you have database settings to be loaded from a particular profile you may need to activate it (no profiles are currently active).

Steps to reproduce the issue

Install config, discovery and admin services
Install pet-clinic-frontend
Install vets

you will see the failure there.

EC2s are granted with Admin permission, network is ok.

Add cleanup section for EKS and EC2 demo

Please add clean up section for EKS and EC2 demo setup for customer to destroy the resources in order to stop incurring charges.
