"no suitable image found" error under Apple Silicon

I'm using electron-builder which has a dependency on this library via electron-builder > dmg-builder > dmg-license > iconv-corefoundation. When trying to build a project using an M1 Mac Mini I'm getting this error:

Error: dlopen(/path/to/node_modules/iconv-corefoundation/lib/native.node, 1): no suitable image found.  Did find:

My searching hasn't found any existing issues. The closest I found was apple/tensorflow_macos#21, but I'm not sure it's related, since I don't think Python is involved here.

It might also be relevant that I have the full Xcode app installed, not just the command line tools.
