You can increase log level
from go2rtc.

Magically started working today...
Just changed log level to trace and seen it's working (haven't tested before changing log level...)
This is quite strange... The only thing I think it can have influenced: I had v1.8.5, there was a warning of an update available, I've updated and it updated to v1.8.4 😮 (no update available right now). It was not working anyway.
I'm not sure if I tried after reboot, I think not and I suspect it might have been the solution: downgrade and restart. Could it be a problem in v1.8.5?
Otherwise I'm sorry I don't have logs now to see where the problem is.

I have never heard about similar issue with v1.8.5. There's just the problem of reconnecting to problematic streams there.
