I use the Wemos D1 MINI. 3 wires: 1 signal to A0, + to 5V, - to ground.

Thanks for the clarification. There's a couple of problems with your setup.
First, based on the Wemos page I found here you are only allowed to put in 3.2V max into the analog input. So you should move the + connector to the 3.3V pin instead of the 5V pin. Not sure if you have damaged the input or not, but that is possible.
Second, you are using a knockoff Pulse Sensor. Please support the original makers of Pulse Sensor and purchase legit hardware. I cannot help you with any hardware related issues because I don't know what is on that clone.
Third, try simply sending some Serial print commands without the sensor plugged in to ensure that you can at least get that working.
