The best place to start is to look at some of the example projects. For instance: basic-native-packager

I think the piece that you might be missing is that by default the plug-in looks for a project name in the docker-compose.yml file to match the name of a project defined in build.sbt. This can also be explicitly defined using the following setting:

composeServiceName := // Specify the name of the service in the Docker Compose file being tested. This setting prevents the service image from being pull down from the Docker Registry. It defaults to the sbt Project name.

This is how the plugin knows which defined service in the docker-compose.yml file is being built by either sbt-docker or sbt-native-packager.

Also, at the bottom of the readme it lists a few of the Docker compose fields that are unsupported. The build: field is one of those. To use the plugin the component needs to be built in sbt using sbt-docker or sbt-native-packager.
