input elements have a separate events property that can be used like so

items: {
  myInput: {type: "checkbox", name: "foobar", events: {click: function(e) { alert("clicked"); }}}
}

This registers your click handler as if you had registered it yourself. So no contextMenu specific data is passed in. But you can easily obtain that data:

function(e) {
    var $input = $(this);
    var $item = $input.closest('li');
    var data = $item.data();
    // data.contextMenuRoot is the menu's root data container
    // data.contextMenu is the data associated to the menu item represented as <li>
    // data.contextMenuRoot.$trigger is the element the menu was opened for
}
