Disconnecting computers from wifi you can just use aircrack.. but you wont be able to reestablish a connection to his pc ...
Stream rdp sessions!? You would need the login info to that computer, and it would have to run windows or at least an RDP Server, and it would have to be enabled to public access...

Yeah, it's definitely difficult to stream from a flying copter... But what you CAN do is disconnect, do a quick MITM attack, plant a trojan (Use karmetasploit from e.g. easycreds https://github.com/brav0hax/easy-creds) and then fly way. The trojan will report to your command & control via internet.

Of course this is much easier said than done, there are a lot of variables and things that can go wrong.
