I just started exploring trying to make this work and I'm running into problems, too. It seems like the same as above, trying to do some digging to see what exactly is going on, but it would make sense for Rack to be looking for application/x-www-form-urlencoded or multipart/form-data (I can see that ARes is sending application/json).
My params hash only has version and format in it.

I am using the latest version of Grape and have this exact same problem. Inside the post response in my api file, instead of using the params hash to build a new model, I end up having to use
temp_params = env["action_dispatch.request.request_parameters"]

I resorted to using that method as well about a month ago. Its been working fine except in testing, so you end up having to do: order_params = request.env['action_dispatch.request.request_parameters'] || params
