Are you sure it's only commits from the latest tag?

I too missed a lot of commits in the initial changelog entry. However, my problem was that the majority of my commits accidentally didn't match the headerPattern of conventional-changelog. Mine is <type> (<scope>): <subject> while it conventional-changelog requires <type>(<scope>): <subject>. Note the whitespace between type and scope. Additionally my headers can include a hash which isn't considered by conventional-changelog. In some commits I didn't specify a scope and those were included in the changelog. I was able to fix my problem by customizing the headerPattern trough parserOpts.

Run with DEBUG=release-it:* ... to see debug output and what gets sent to the conventional-changelog package.
