Yes.. this is more or less implicit because RAUC intentionally does not work without signatures and the process of unpacking a bundle and signing it always requires a key, cert and keyring (and the error messages are quite obvious).
But as we have these option noted in similar cases (e.g. rauc resign), too it is a valid objection that we should also note this in rauc convert.

That's something a bit difficult when evaluating rauc, there are not a lot of complete exemple (understand, cut, paste, check if that worked, and then when you have an end to end exemple working, start to change things)

Doing 'complete' examples is a little tricky as most things depend on the individual system requirements but I agree that more examples would make it more easily to figure out what to do.
