Slicing is hard-coded to be just one slice, and this is done at a rather deep level in the code. Extending this to selecting subregions for output without entirely reducing a dimension is possible, but difficult.
It sounds like you are using vtk and/or tab outputs. The vtk and tab files are separated by block, but hdf5 outputs a single file containing all blocks. If the issue is having an unreasonable number of files, at least this can be reduced from 30*num_blocks to 30 by specifying 30 hdf5 outputs.

Does the hdf5 output support outputting slices? I was under the impression that the hdf5 output only supported outputting the whole mesh.

It should output slices just fine, and the Python reader can read in the sliced data as well.
