Without having actually tried this myself, you should be able to set the ADDRESS environment variable to something like ":8443" to change it to use port 8443 (or whatever port you like). If you do that on the authenticate server, on the corresponding proxies you'll also have to set AUTHENTICATE_SERVICE_URL to include the port.

I'm trying to set this up on Kubernetes, with all the pomerium services on the same pod. I used the docker-compose.yml as a reference. But I'm getting an error because both pomerium-authenticate and pomerium-proxy are trying to bind to 443. Is it possible to run these on the same pod? I can't tell how to configure how these services connect to each other.

It may be worth mentioning that this is my first Kubernetes deployment. I think I am pretty close, but I don't want to split the proxy and authenticate onto separate nodes for a very small deployment.
