I'm having the same problem with the latest software serial 2.4.1. Every 10s or so it 'soft WDT reset'

This was solved, when you send out a Modbus command to a slave and you're waiting for a reply, you need to temporarly inhibit the watchdog by using the ESP.wdtDisable() command. don't forget to re-enable it afterwards.
