Try the following. defaultConnectionString is used for any entries that do not have it explicitly defined, each instance entry can have its own connectionString property also:

@patHyatt has the right schema here...I've updated the .config.example to hopefully help future users with this. We run a highly standardized environment at Stack Exchange so we actually don't use the overrides at all but wanted to provide them.

I'm sure the configs will be getting lots of commit love with more examples...unfortunately when choosing something as portable as JSON it comes with the downside of no clean comments ability.
