Yes, I just realized that there are those two core options and was asking myself if these modules are needed since they, more or less, do the same than what Odoo has introduced. Am I missing something?

I haven't dug enough to say, but I'm pretty sure the variant configurator itself (the one2many with the pairs Attribute - Value) are not in core and it's needed. It's the main value of the module.

They have included the tool to configure a product in the Sale Order line:

Which allows you to choose a Product Template and select the attributes that you have added to the template:

I don't know if this would replace completely the variant configurator, I will have a deeper check.

Yeah, but that tool is slower for quick input and AFAIK, it's buggy. Both can coexist in any case.
