First question: is that 20Hz per bicycle or combined of all (or are you only testing with one)?

My suggestion is to, for testing purposes, have 5 different callbacks with their own variable that gets incremented. eg: def volo_capt7: velo7 += 1. It could be a couple different things. Possibly something with threads and concurrency of data (not too familiar with that, so I'm not sure if that's it). Or your callback is taking too long and causing things to break. Simplifying the callback will help narrow it down.

Another idea: change a callback to def volo_capt7: velo7.append(time.time()) will give you a better handle on the timing.
