Sadly this is not configurable. You can try changing the images inside the img/ folder but there is no way to choose the style of the pieces or how the board itself looks. As far as I know, GitHub does not allow changing the style of tables.
If you add multiple styles or find a way to change the style of a markdown table, PRs are very welcome.

Yes, I changed the pieces, and recopied your template and it magicly worked, come and see and make a move lol
