Note: I had to resize the window on this single note for the «trick» to work.
I'm not sure what the precise conditions have to be for it to happen but a certain number of the notes I have are concerned.

in your other issue you said "debian gnome", could you provide the versions please? (buster/bulleyes/sid? GNOME Shell 3.??)
the version of the extension too (does it come from the "official" GNOME website or is it installed manually from github?)

(Ooops, sorry. First time I use this kind of discussion.)
Buster.
Gnome shell 3.30.2
Notes 17
French version
From GNOME website, I think (if notes is not default in the «tweak» thing – can't recall). Certainly not installed manually.
Also: in some circumstances, after the text has disappeared, it shows again when the mouse arrow hovers off of the window; it then stays visible even when the arrow hovers back in.
It seems to depend on how far one scrolls down the no-focus zone AND on how high the note's window is positioned on the desktop screen (near the top or the bottom of the screen); the closer from the top, the sooner the text disappear when scrolling down.
