Chart is getting entirely re-drawn on AddPoints about react-highcharts

i solved the issue by using IsPureConfig and deep cloning the config object.
If you see a better way don't hesitate :)

Regarding the docs, i would include a small doc on how to redraw the chart when IsPureConfig is enabled.
