In MakeMKV, make sure that the output folder is something under /output. By default, MakeMKV should set the output folder to /output/<Name of the disc>.

Oh wow yeah this was it, thanks! I set the output destination in the docker install settings, but I was also trying to use that same location in MakeMKV's settings too. Changed that setting in MakeMKV to just the default /output and let the docker settings handle it, works perfectly now. Thanks again!
