I don't know if that would work, but you could try to tweak commands sent for non interactive mode to:
run
detach
quit
from ios-deploy.

No, output is routed through the debugger. But you could log in the app using NSLog and see device logs using Xcode's Organizer.

It would be useful to launch the application and see the console output without the debugger.
Is there a practical reason why this is not possible?
