I also go these errors. But I then went into the directory that was created and then did yarn install. That worked and I could then run gatsby develop

You need to enable legacy dependancies when creating the site from git. Try this (change "website" to whatever you want the folder to be called):
npx --legacy-peer-deps gatsby-cli new website https://github.com/gregberge/smooth-doc-starter
