I'm not a heavy user of EMR and of course RedShift.
CSV on S3 is typical format?
CSV loses the type information of columns...

I don't know if CSV is typical for S3 (it probably isn't). But if S3 files are used with other AWS services (e.g. EMR or RedShift, loading data into DynamoDB), CSV/TSV is one of the most optimal formats (sometime the only format).
Columns would indeed be lost, so it wouldn't be as flexible as JSON, but perhaps something like what https://github.com/tagomoris/fluent-plugin-mysql does:

columns status,bytes,vhost,path,rhost,agent,referer
