If that collides with panning, we could try a scribble gesture: drag over wire 3+ times in <x ms. Or draw an X.

It shouldn't collide since the two have different velocity thresholds. But this, like all gestures we use, will probably need a lot of tweaking and experimentation.

But before introducing new gestures I'd like to do the-grid/the-behavior#2

I'm actually more concerned with the feasibility of any wire-related gestures in relation to how spacious the graphs are. The old graphs with positioning based on dataflow's node size have quite a lot of air, but as seen here, with our new node size they can be a lot more tight.

This means there is little space left for gesturing:
