Worth noting: We now have a type Dictionary map[string]*string in the docker compose parsing bits which handles this sort of stuff, but we're not utilizing this approach in the unix process handling yet.

I'm going to close this, since for local unix processes, it makes sense to inherit the entire workspace environment by default. In the future, we may provide more control over process environments, but will await feedback on what's needed there.
