Looks like tesseract-ocr is an ubuntu package so it should be pretty easy to get this up and running in much the same way the .doc parsers use the shell program antiword. Same comment applies for issues #15 #14

@deanmalmgren great work on this. I've take a similar approach when building FilePreviews.io. Might be able to help out with some parsers.
Something I did on that project was use dependencies that I could interchange between operating systems, were easy to install on Linux(mostly compiled from source) and on OS X via homebrew. Tesseract is available on Homebrew as well.
