I've solved the problem by just using the api.mysite.com subdomain pointing to the Laravel API and www.mysite.com pointing to the node.js server/nuxt.

This NGNIX config will proxy the NUXT you can remove the whole include statement at the end and in the middle and the top. If your trying to host both Laravel and Nuxt on the same exact domain (example.com and say example.com/api) then you'll have to use a much more complicated config. I would actually recommend setting up a subdomain for the Laravel install though (api.example.com for example)
